No, you are not required to mention details of vehicle on the tax invoice.
Vehicle details are required to be mentioned on the e-way bill required as per GST act. In case you are delivering the product at your shop then there is no need for e-way bill also.

No bcz ownership of goods is transferred at the counter. Now it is the duty of the customer how to handle the compliance.
Vehicle number is not required to be reported in the invoice in case of counter sale even if the goods exceeds INR 50K.
